G.I. Joe was a pretty terrible movie with lots of WTF moments. However, one of the biggest WTFs I had was towards the beginning of the movie, after the Joes were cleaning up the debris from the attack. There was a soldier with a pushbroom, sweeping detritus into a dustpan held by another soldier. That’s all fine and dandy, but once the dustbin was full, the soldier just emptied it… back onto the floor.
Alton Brown’s Stove Top Mac-n-Cheese
Ingredients
- 1/2 pound elbow macaroni
- 4 tablespoons butter
- 2 eggs
- 6 ounces evaporated milk
- 1/2 teaspoon hot sauce
- 1 teaspoon kosher salt
- Fresh black pepper
- 3/4 teaspoon dry mustard
- 10 ounces sharp cheddar, shredded
Directions
In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.
Notes
I found that I liked this recipe better with 8 ounces of cheddar (especially since that’s how much comes in a bag), and could probably use a little less evaporated milk as well.
